Sweet Potato Soufflé- A Healthy Fall Treat!

I don't know about you but I am always looking for yummy, healthy ways to enjoy fall! There are so many fabulous things to eat during Fall. There are also a lot of things we love and enjoy that aren't that good for us. Because I have been cleaning up my eating a bit over the last couple of months I have some exciting new recipes to share! 




This Sweet Potato Soufflé is inspired by a different recipe I found and tweaked a bit! The crispy pecans on top remind me of Pecan Pie and the sweet potato soufflé reminds me of pumpkin pie or candied "yams" (we actually always use sweet potatoes) around Thanksgiving. But, this dish is something I feel great about eating. I think this will become a staple for our Holiday meals and even everyday Fall dinners. I served this as dessert the other day when my parents were in town. The soufflés would be awesome for a wholesome after school snack and they make your kitchen smell divine! 

Sweet Potato Soufflé 

2 sweet potatoes (or about 2 lbs)
1/2 cup milk or cream (come on, use cream!)
4 tablespoons 100% maple syrup
4 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 teaspoon cinnamon
2 eggs, beaten
Sea salt, to taste
Whole (or chopped if you prefer) pecans to sprinkle on the top

Peel and chop sweet potatoes, put the sweet potatoes in a large pot, cover with water, bring water to a boil then simmer until the potatoes are easily mashed with a fork. Drain potatoes and return to pan. Add cream, maple syrup, butter, nutmeg, cinnamon and eggs. Mash together until you've reached your desired consistency. Salt if you'd like, taste if you dare.. raw eggs, I know, but who cares, right?!  Divide the mixture into ramekins and top with pecans. 

Bake at 350 for about 20 minutes. My pecans did get a bit dark but they tasted perfect.

Serve with whipped, unsweetened cream or if you'd like to make it truly indulgent it would be great with some vanilla ice cream. (Next on my clean eating transition- I am dying to learn how to make ice cream so I can make it with a healthy sweetener and no refined, processed sugars! I do love creamy, cold, sweet treats!)


Remember this is not full of sugar… but it is still tasty, sweet and full of flavor! Try it!
 Fall has been beautiful here. These are pictures are from our balcony a few days ago. Fall is pristine, beautiful, calming and just perfect in so many ways. But, the ripe perfection of Fall doesn't last very long. The majority of the trees around here are starting to look bare and the fullness of the trees and the colored leaves are almost gone. It is kind of sad. Nevertheless it is still gorgeous here.. I think it is just about time to brace ourselves for winter...
